Preheat your waffle maker according to the manufacturer's instructions.
In a mixing bowl, combine the shredded mozzarella cheese, almond flour, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Fold in the diced ham and shredded cheddar cheese until evenly distributed throughout the batter.
Lightly grease the waffle maker with non-stick cooking spray. Spoon ¼ of the batter onto the center of the waffle maker and close the lid. Cook for 4-5 minutes or until golden brown and crispy.
Carefully remove the chaffle from the waffle maker and repeat with the remaining batter.
Serve the ham and cheese chaffles warm, optionally garnished with fresh herbs.
