Keto Creamy Feta Soup With Ham

- 1 cup Greek Yogurt
- 1 cup Heavy Cream
- 1 cup Feta Cheese crumbled
- 4 cups Vegetable Borth
- 6 thin slices Ham
- 1 small Red Onion finely chopped
- 3 cloves Garlic minced
- 4 teaspoon Olive Oil plus extra to garnish
- 2-4 tablespoon Fresh Herbs dill or parsley
- Black Pepper freshly ground
Heat the olive oil in a saucepan and sauté the onions for 5 minutes, seasoning with pepper. Add the garlic and stir, allowing to soften for a minute.
Add the broth and cream and simmer for 10-15 minutes. Add the feta cheese.
Puree the soup with a stick blender, fold in the yogurt and remove from the heat.
Dice the ham and crisp in a dry pan for 30-40 seconds.
Serve the soup hot, topped with the ham and garnished with fresh herbs and a swirl of olive oil.
