Preheat your oven to 350°F (175°C) and line a baking sheet with baking paper.
In a mixing bowl, whisk together the almond flour, coconut flour, ¼ cup granulated sweetener, baking powder, and salt.
In another bowl, beat the eggs, melted butter or coconut oil, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and mix until a thick dough forms.
Scoop tablespoon-sized portions of the dough and roll them into mini churro shapes.
Place the churro bites on the prepared baking sheet, leaving space between each one.
Bake in the preheated oven for 10-12 minutes, or until golden brown and firm to the touch.
While the churro bites are baking, mix the remaining ½ cup granulated sweetener and ground cinnamon in a shallow bowl.
Remove the churro bites from the oven and let them cool slightly. Brush each bite with melted butter or coconut oil, then roll them in the cinnamon-sweetener mixture until coated.
