Simple Lunch Salad with Tuna
Ingredients
- 1 can Tuna in brine
- 2 tablespoon Olive Oil
- 2 cups Spinach
- 2 tablespoon Feta Cheese chunks
- 1 ½ teaspoon Dijon Mustard
- ¼ Lemon zest
Instructions
- In a small bowl combine all the wet ingredients.
- In another bowl combine the tuna and spinach.
- Pour wet ingredients over tuna and spinach and mix when ready to eat.

I have completed my first 5 days and like the recipes so far, especially the salmon with garlic & lemon. Can i continue on with these recipes for the next 2 phases, or do I have to follow your recipes? I am single and noticed I am having left overs that I would like to finish before moving forward to the other recipes.

I’m starting today! Fingers crossed - can I check that kale/ cabbage and green lettuce are ok in moderation? I am post menopause and really need my leafy greens!
