Keto Baked Zucchini Fries
For these delicious low carb zucchini fries, you'll need the following:
- 2 medium Zucchinis
- 1 Egg
- ¾ cup Parmesan Cheese
- 4 tablespoon Olive Oil
- Salt & Pepper
Ready to make these delicious fries?
To get things started, preheat your oven to 390°F / 200°C and line a wide baking pan with baking paper.
Next, slice your zucchini into long fries strips.
Whisk your egg in a bowl and season with salt and pepper to taste (you won't need much salt because the parmesan is already sharp and salty!)
Add your parmesan cheese to another bowl and begin coating your zucchini fries!
Dip the sliced zucchini fries into the egg making sure to coat them evenly all over.
Toss them into the bowl of parmesan and press to coat evenly on all sides.
Place the zucchini fries onto your baking tray and drizzle them with olive oil.
Now they're ready to bake!
Place them in the preheated oven for 15-20 minutes, rotating the tray halfway through until the fries are golden brown and crispy.

Ingredients
- 2 medium Zucchinis
- 1 Egg
- ¾ cup Parmesan Cheese grated
- 4 tablespoon Olive Oil extra virgin
- ¼ teaspoon Salt
- ¼ teaspoon Black Pepper
Instructions
- Preheat the oven to 200°C/390°F and line a wide baking pan with baking paper.
- Slice the zucchini and cut long strips to make fries.
- Whisk the egg on a plate and season with salt and pepper. Be frugal with the salt since the parmesan cheese is already sharp and salty.
- Add the grated parmesan cheese to another plate.
- Dip the zucchini sticks in the egg to coat evenly, and then toss into the grated parmesan. Press to coat evenly on all sides.
- Place the fries on the baking pan and drizzle with the olive oil.
- Bake in the preheated oven for 15-20 minutes, rotating the pan halfway through, until golden brown and crispy. Serve warm.

Hey Tom, you can definitely substitute the Parmesan for other types of cheese or just avoid cheese altogether. Make sure you check the carb content of the cheese you use but most will be fine 🙂
