So, every year we are going through a zucchini phase.
From zucchini fries and zucchini balls to stuffed zucchini we want to make the most of this delicious vegetable.
It’s the easiest and most delicious way to prolong that wonderful summery feeling.
Set the table utilizing seashells from your last beach vacay, tea lights in mason jars and light fabrics to conjure an authentic summer feel.
Today we are making zucchini boats.
Stuffed with minced beef, tomato sauce and a golden layer of mozzarella cheese, low in carbs but full of flavor!
Keto Zucchini Boats
For these delicious zucchini boats you'll need:
- 2 large Zucchinis
- 2 cups Minced Beef
- 1 cup Mozzarella Cheese
- 1 Onion
- ½ cup Tomato Sauce
- 2 tablespoon Butter
- 1 teaspoon Thyme
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Let's get started!
First, preheat your oven to 390°F / 290°C and line a baking pan with baking paper.
Cut your zucchinis lengthwise and scoop out the flesh with a spoon.
Keep the zucchini flesh to make other recipes like our Baked Zucchini Balls.
Next, finely chop your onion and heat your butter in a pan.
Sauté the minced beef with the onion, seasoning with thyme, salt and pepper for 5-7 minutes.
Add the tomato sauce and mix well, making sure everything is combined.
Now it's time to make the zucchini boats!
Divide the mixture into each of the four zucchini boats.
Almost done!
Sprinkle your mozzarella over the tops of the zucchini boats.
Bake for 30 minutes, rotating the pan halfway through to ensure the zucchinis are cooked and the cheese is golden brown.
Serve your zucchini boats hot and enjoy!
These are a great low carb meal you can enjoy for lunch or dinner.

Ingredients
- 2 large Zucchinis
- 2 cups Ground Beef
- 1 cup Mozzarella Cheese grated
- 1 Onion
- ½ cup Keto Tomato Sauce
- 2 tablespoon Butter
- 1 teaspoon Thyme
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Instructions
- Preheat the oven to 390°F/200°C and line a baking pan with baking paper.
- Cut the zucchinis lengthwise and scoop out the flesh with a spoon to create boats. (You can keep the zucchini flesh to make zucchini balls-find the recipe here)
- Place the boats on the lined baking pan and set aside.
- Finely chop the onion and heat the oil in a pan. Sauté the minced beef with the onion, seasoning with thyme, salt and pepper for 5-7 minutes.
- Add the tomato sauce and mix well.
- Divide the mixture into the boats and top with a layer of grated mozzarella cheese.
- Bake for 30 minutes flipping the pan halfway through, until the zucchinis are cooked and the cheese gets golden brown. Serve hot.
