With just 3 simple ingredients - coconut flour, natural peanut butter and sugar-free maple syrup, they couldn't be easier to make.

You can also make your own coconut flour from scratch by grinding desiccated coconut in a grinder or mortar and we'll cover how to do that below!

Why You'll Love Them
- Only 3 ingredients
- Just 10 minutes of preparation
- They're no bake
- Healthy and totally satisfying
- Low carb and keto-friendly (only 1.9g net carbs per ball!)
Ingredients You'll Need
- Peanut butter - the best peanut butter for keto is the natural, unsalted variety.
- Coconut flour - a popular choice low-carb and keto diets because it’s higher in fiber than gluten-free flour like almond flour. The best coconut flour for keto is a finely ground, blanched variety that doesn’t contain added sugar. Learn how to make your own coconut flour below.
- Maple syrup - there are many different brands of sugar-free maple syrup out there, but the type that is used most often on keto is pure liquid concentrate. It has less carbs and calories than the other options. It is also the cheapest option and has a nice consistency that makes it easy to add to coffee, almond milk, or protein shakes for a sweetener. I suggest making your own homemade keto maple syrup or using Lakanto Sugar Free Maple Syrup.
How To Make Keto Energy Balls
No bake peanut butter energy balls are made in just 3 easy steps.
Step 1
Take a mixing bowl and combine the peanut butter, sugar-free maple syrup and coconut flour.
Mix everything together until you get a thick but workable batter. You can also add a pinch of salt in this step depending on your taste.
Step 2
Next, shape the energy ball batter into bite-sized balls and place them on a baking pan lined with baking paper.
Make sure there's room between each ball so that they don't stick together.
Step 3
Place the baking pan in the refrigerator for 30 minutes to help the energy balls set. Serve cold, and optionally sprinkle them with desiccated coconut.
Are Peanut Energy Balls Keto?
Yes! Because we use low carb coconut flour and sugar-free sweetener, our energy balls are totally keto-friendly.
Each ball only contains 1.9 grams of net carbohydrates as well as 1.1 grams of fiber, 7 grams of fat, and 3.3 grams of protein for all-day energy!
How To Make Coconut Flour
If you want to make your own homemade coconut flour, it's super easy to do.
All you need is some shredded or desiccated coconut, and each cup yields about ½ cup of coconut flour.
- Place the desiccated coconut in either a blender, coffee grinder, or mortar. Blend or grind until it reaches a powder consistency.
- Store in an airtight container.
Storage Tips
In the fridge: Any leftover energy balls can be stored in the fridge for up to a week. Make sure to keep them in an airtight container or bag.
In the freezer: If you want to make a large batch of these energy balls (which is great for meal prep), you can store them in the freezer. Freeze them for a few hours on the baking tray and then transfer them into freezer-proof bags. They'll keep for up to 3 months and are great as a grab-and-go snack.
